桂西野生蕨菜的生物活性成分及抗性研究

摘  要:
为研究桂西野生蕨菜的生物活性成分与抗逆性的关系,以野生蕨菜为试验材料,测定了野生蕨菜的蛋白质、糖、叶绿素及丙二醛(MDA)含量和过氧化物酶(POD)活性。结果表明,每100 g桂西野生蕨菜鲜样中含蛋白质0.334 g;叶绿素和还原糖含量较少,叶绿素a/b比值为2.11,可溶性糖主要集中在叶片;顶芽的MDA含量明显高于叶片、达到3.0776μmol/g;蕨菜采后各部位的POD活性大小为幼茎>顶芽>嫩叶>老叶。说明桂西野生蕨菜含丰富的营养成分,并具备抵抗逆境的适应机制。

摘  要:
Aimed to reveal biological active ingredients and resistance of wild bracken in the western of Guangxi,the paper took wild bracken as experimental materials,measured protein content,chlorophyll content,sugar content,malondialdehyde(MDA) content and activities of peroxidase(POD) of wild bracken.The results showed that it included 0.334 g protein per 100 g fresh wild fern,had less chlorophyll and reducing sugar content and chlorophyll a/b ratio of 2.11,while soluble sugar was mainly concentrated in the leaves.The MDA contents of terminal bud were significantly higher than the leaves,reached 3.0776 μmol/g.The POD activity in the various parts of the fresh wild bracken showed as followed: young stem >terminal bud> young leaves> old leaves.The results suggested that the fresh wild bracken were rich in nutritional ingredient,and had an adaptation mechanism to against adversity environment.
