核桃贮藏工艺的优化

摘  要:
利用单因素试验和正交试验方法考察了核桃(Juglans regia)含水率、破碎程度、贮藏温度、气调条件、光照等因素对核桃酸价及过氧化值的影响。结果表明,最佳工艺为核桃含水率4.0%、破碎程度1/16,、充氮气、5℃下避光保存。

摘  要:
The moisture content, storage temperature, air conditioning, preservation, broken degree, light affecting the value of acid and superoxide of walnut were in vestigated with single factor test and orthogonal test. The resluts showed that 4.0%moisture content, damage degree 1 / 16, nitrogen, 5 ℃ preserved without light is optimal.
