豆乳酸豆乳及豆乳冰淇淋的研制

摘  要:
本课题研制了豆乳、乳酸发酵豆乳、豆乳冰淇淋,并探讨了较佳的脱腥方式、生产工艺、原料配方,基本获得成功。结果显示:产品感官评定良好,营养丰富,成本低廉,其生产工艺简单易行。这为大豆综合利用提供了新的可行途径。

摘  要:
The soya-beau milk, lactic fermentation soya-bean milk and ice cream of soya-bean milk have been developed.The better method of taking off the smelling of soya-bean, the product technology and the prescription of raw materials were explored.The results showed that the products had good evaluation of sense organ, and more nutritions.The production cost was low.The technological process was simple and easy to manufacture.All these provide new feasible way for the comprehensive utilization of soya-bean.
