脂肪酶催化合成硬脂酸淀粉酯的研究

摘  要:
在无溶剂体系中,用脂肪酶Lipozyme TL IM催化合成硬脂酸大米淀粉酯。考察了初始水活度、温度、时间、底物配比等因素对淀粉酯合成的影响,用水合盐进行了体系水分的调控。确定最适反应条件为控制水活度0.75,酶与淀粉质量比1/10,温度65℃,反应12 h,取代度可达到0.2188,经红外光谱检测,3 000~3 700cm-1的羟基的伸缩振动的特征峰强度变小,说明是淀粉羟基在酯化后被取代所致。

摘  要:
Stearate starch was synthesized by using immobilized lipase Lipozyme TL IM as the biocatalyst in the solvent-free system.Several factors,such as initial water activity,temperature,time and ratio of substrates had been investigated in the esterification.Salt hydrate pairs were used to control the water activity in the system.The results showed that the optimum reaction conditions were water activity 0.75,lipase/starch rate(w/w) was 1/10,the reaction temperature was 65 ℃,the reaction time was 12 h.A degree of substitution of 0.2188 was obtained.Infrared spectrometris showed that the intensity of the peak which was between 3 000-3 700 cm-1 weakened,indicating that the hydroxyl bond of starch was substituted after esterification.
