凤凰茶体外清除亚硝酸盐及阻断亚硝胺合成的研究

摘  要:
在体外模拟胃液(pH=3、37℃)的试验条件下,研究潮州菜常用料中凤凰茶(1%)对亚硝酸盐的清除及阻断亚硝胺合成的能力,并与Vc进行比较。结果表明,凤凰茶对清除亚硝酸盐及阻断亚硝胺的化学合成具有良好效果,其最大清除率为62.83%,最大阻断率为45.05%。

摘  要:
The paper study on the capability of scavenging nitrite and disconnecting nitrosamine synthesis with Fenghuang tea of chaozhou food common material,under simulated human gastric juice (pH=3、37℃ )in vitro, and compared with vitamin C.The results demonstrated that the Fenghuang tea extracts had a good effects on scavenging nitrite and disconnecting nitrosamine synthesis.The maximum scavenging rate of nitrite was 62.83%,and the maximum disconnecting rate of nitrosamine synthesis was 45.05%.
