摘 要:
马油具有丰富的药用和食用价值,且开发利用较少,具有研究意义和综合利用价值。采用中性蛋白酶,通过酶解法提取粗马油,运用单因素试验、正交试验法对提取工艺进行优化,获得最佳工艺参数,同时检测粗马油理化性质,并与鱼油等油脂进行对比分析。结果表明,最佳的提取工艺条件为酶解温度55℃、酶解时间2.5h、酶添加量1%、pH值6.5,此时马油提取率为74.74%。研究成果为进一步开展马油精制和脂肪酸成分分析提供了良好的基础。

摘 要:
Horse oil has a wealth of medicinal and edible value,and it's development and utilization is relatively few,which leads to its research significance and comprehensive utilization value. Neutral protease was adopted to extract crude horse oil through enzyme hydrolysis method. Single-factor experiment and orthogonal test method were used to optimize the extraction process to obtain the most suitable technological parameters,and then the physical and chemical properties were tested,and compared with such oil as fish oil. The result showed that the best extraction process conditions were enzymolysis temperature 55℃,enzymolysis time 2. 5h,additive enzyme amount 1%,and pH value 6. 5. The extraction rate at this point was 74. 74%,which could lay a solid foundation for the purification and fatty acid composition analysis of horse oil.
