徐海鸡的屠宰性能和肉品质研究

摘  要:
[目的]研究徐海鸡的肉用性能。[方法]以13周龄徐海鸡为研究对象,随机选取24只(12公鸡,12母鸡)测定其屠宰性能和肉品质。[结果]13周龄徐海鸡公、母鸡活重分别为771.92和644.17 g,屠体率分别为92.42%和90.02%,全净膛率分别为67.11%和65.88%。公、母鸡腿肌的p H分别为5.94和5.93,系水率分别为71.66和72.04,剪切力分别为3.05和2.89,且差异均不显著。公鸡腿肌的L值大于母鸡,a、b值小于母鸡,且差异均不显著。[结论]徐海鸡经多世代提纯选育后,可用于优质肉鸡的生产。

摘  要:
[Objective] To study the meat production performance of Xuhai chicken. [Method] The slaughter performance and meat quality of24( 12 cocks,12 hens) Xuhai chickens at age of 13-week were measured randomly. [Result] The liveweight of 13-week cocks and hens were771. 92 and 644. 17 g,the percentage of dressed weight were 92. 42% and 90. 02%,percentage of eviscerated yield were 67. 11% and 65. 88%;The p H values of leg muscle of cocks and hens were 5. 94 and 5. 93,water holding capacity were 71. 66 and 72. 04,shear force were 3. 05 and2. 89,and the differences were not significant. The L-value of leg muscle of cocks was greater than hens',the a-value and b-value were less than hens',and the differences were not significant.[Conclusion]After the system selection,Xuhai chicken can be used for high quality meat chicken production.
