梨渣可溶性膳食纤维的提取及抗氧化特性

摘  要:
用NaOH对梨渣中可溶性膳食纤维进行提取,探讨提取时间、温度、液料比等对提取率的影响,优化提取工艺并测定可溶性膳食纤维的抗氧化能力。结果表明,最佳提取工艺条件为NaOH质量浓度30.0 mg/mL,提取时间2.38 h,液料比9.58∶1,温度89.63℃,膳食纤维的提取率为14.12%;梨渣膳食纤维对O2-.和DPPH.的最高清除率分别为41.32%和60.28%,具有较强的抗氧化作用。

摘  要:
The extraction of soluble dietary fiber(SDF)from pear residue by NaOH,the paper investigated the effects of extraction time,temperature,and ratio of liquid to solid,its antioxidant capacity was also determined.The optimum conditions for fiber extraction were NaOH concentration 30.0 mg/mL,extraction time 2.38 h,ratio of liquid to solid 9.58∶1,and temperature 89.63 ℃.Under these conditions,the extraction rate was 14.12%.SDF from pear residue have strong antioxidant activity,the highest scavenging for O2-· and DPPH·free radical could be as high as 41.32% and 60.28%,respectively.
