彩色稻籽粒蛋白质含量在单株间的变异及分布

摘  要:
【目的】明确彩色稻籽粒蛋白质含量的变异情况以及籽粒中蛋白质含量分布特点。【方法】对彩色稻新品系"云彩3号"的49个单株糙米、精米和米糠进行蛋白质含量测定,并对同一单株糙米、精米和米糠蛋白质含量,以及有色单株和无色单株的籽粒蛋白质含量进行了比较研究。【结果】不同单株籽粒蛋白质平均含量(%)为米糠>糙米>精米,米糠中的蛋白质平均含量最高(14.37%),糙米其次(10.25%),精米最低(9.11%);蛋白质含量糙米显著高于精米,在糙米加工成精白米的过程中损失了11.12%的蛋白质,这些蛋白质主要留在米糠中,而80%以上的蛋白质主要存在于胚乳中;有色和无色单株蛋白质平均含量(%)均依次为米糠>糙米>精米,有色和无色精米间蛋白质含量差异达极显著水平,而米糠和糙米间差异不大。【结论】由此可见,籽粒蛋白质含量有色单株高于无色单株,这种差异主要来源于胚乳。

摘  要:
【Objective】The purpose of the article is to determine the variation and the distribution characteristics of grain protein content of color rice. 【Method】The protein contents( PC) of brown rice,milled rice and rice bran in 49 plants of color rice Yuncai3 were measured and their distribution and classification were analyzed. 【Result】The average protein content( %) of each individual plant was rice bran >brown rice > milled rice. The average content of protein in rice bran was 14. 37 %,and in brown rice was 10. 25 %,and in milled rice was 9. 11 %. The protein content of brown rice was significantly higher than that of milled rice. 11. 12 % protein was lost in the process of processing rice into brown rice,and these proteins mainly remained in rice bran,so more than 80 % of the proteins in rice grain were mainly found in the endosperm. In addition,the protein content of colored plants and colorless plants was compared,and the average protein content( %) of colored plant and colorless plant was respectively rice bran > brown rice > milled rice. The protein contents of milled rice between colored and colorless reached significant level,but there was little difference between rice bran and brown rice. 【Conclusion】The grain protein content of colored rice is higher than that of colorless rice. The difference in protein content between colored plants and colorless plants is mainly from endosperm.
