栽培蔬菜与野菜营养物质含量的比较研究

摘  要:
采用分光光度法、折光法、2,6-二氯靛酚滴定法、EDTA滴定法测定了泰安市郊区11种栽培蔬菜和10种野菜中的营养物质含量。结果表明:11种栽培蔬菜中蘑菇的营养价值最高,其次是青椒和菠菜,营养价值较低的是黄瓜;10种野菜中苋菜的营养价值最高,其次是荠菜和香椿,蕨菜的营养价值最低。

摘  要:
In order to provide a scientific basis for people's daily diet,we evaluated the protein,carbohydrates,vitamin C,calcium,iron,zinc and Se contents of 11 cultivars and 10 wild vegetables in Tai'an suburb using spectrophotometry, refractometry,2,6-dichlorophenolindophenol titration,EDTA titration.The results showed that in 11 rinds of cultivation vegetables mushroom's nutritonnal value was the nightest,next was the green pepper and the spinach,what the nutritional value was lowest was the cucumber;In 11 kinds of wild vegetables three-color amaranth's nutritional value was the highest,next was the capsella bursa-pastoris and the Chinese foon,bracken's nutritional value was the lowest.
