蛇龙珠和白羽葡萄生长期间白藜芦醇及其相关酶变化趋势研究

摘  要:
以酿酒红葡萄品种蛇龙珠(Vitis viniferaL.cv.Carbernet Gernischet)、酿酒白葡萄品种白羽(V.viniferaL.cv.Rkatsiteli)为材料,研究了果实生长发育过程中白藜芦醇(Res)及其糖苷(PD)含量变化,以及与苯丙氨酸裂解酶(PAL)和β-葡萄糖苷酶(β-Glu)活性间的关系。结果表明,不同品种果实生长发育期间白藜芦醇及其糖苷的变化规律差异较大,蛇龙珠果实内的白藜芦醇及其糖苷含量有积累高峰出现;而白羽果实中白藜芦醇含量很低,其糖苷持续下降。两个品种果实内苯丙氨酸裂解酶活性变化差异较大,与白藜芦醇及其糖苷含量差异一致;而β-葡萄糖苷酶的活性变化规律基本相同。

摘  要:
The contents of resveratrol(Res),piceid(PD) and the relations with the activities of relevant enzymes,such as phenylalanineammonialyase(PAL)and β-glucosidase(β-Glu)were studied during the development of grapes.The results showed that the contents of Res in Carbernet Gernischet and Rkatsiteli existed obvious difference during the development of grapes.The contents of Res and PD in Carbernet Gernischet had a significant accumulating peak.The content of Res was low and the content PD declined during the development of Rkatsiteli grapes.There was an obvious difference on PAL activity between Carbernet Gernischet and Rkatsiteli,which was correlated with the changes of the contents of Res and PD.The changes of β-Glu activities showed the same trend during the development of Carbernet Gernischet and Rkatsiteli grapes.
