The ratio of flesh to body and analysis on biochemical composition of muscle in Pachyhynobius shangchengensis.

摘  要:
This study was conducted to determine the ratio of flesh content and biochemistry of the muscle of Pachyhynobius shangchengensis in order to assess the nutrition and provide the basic reference for nutritive physiological studies. Biochemical analytic method was used to determine the ratio of flesh content and biochemical compositions in the muscle of P. shangchengensis. Results revealed that the ratio of flesh contents of female and male P. shangchengensis were 54.93 and 55.84%, respectively. The protein content, total saccharides, and fatty acids of female and male P. shangchengensis were 15.44 and 15.67%, 1.70 and 1.89%, and 0.68 and 0.68%, respectively. There were 18 kinds of amino acids (12.72%) observed, wherein eight (4.68%) kinds were essential amino acids. The essential amino acid index was 72.68 and the limiting amino acid was valine. There were 11 kinds of fatty acids composed of 80.02% unsaturated fatty acids and 19.98% saturated fatty acids. It is suggested that the meat of P. shangchengensis has high nutritive value due to its high protein and low fat contents.
