摘要：

用国标方法检测了乌鲁木齐市达坂城区某户哈萨克族牧民饲养的15匹哈萨克马马乳的化学成分和理化指标。结果表明:马乳水分含量(90.01±0.25)%、干物质含量(9.99±0.25)%,其中蛋白质、脂肪、乳糖、灰分平均含量分别为(2.18±0.18)%、(0.84±0.24)%、(6.56±0.20)%、(0.36±0.04)%;钙、磷、钠平均含量分别为(84.7±16.6)mg/100g、(52.1±6.3)mg/100g、(15.9±5.0)mg/100g,亚油酸占总脂肪酸(11.44±1.32)%,亚麻酸占总脂肪酸(27.30±2.25)%;马乳的相对密度为(1.033±0.001)g/cm~3,冰点为(-0.544±0.016)℃,酸度为(5.35±0.79)°T。

摘要：

The chemical composition and physico-chemical indexes of milk of 15 Kazakh horses were measured by national standard method,which were breed by Kazakh herdsmen from Dabancheng district,Urumqi.The results showed that:the percent of the water content and the dry matter content was(90.01±0.25)%and(9.99±0.25)%,respectively.And the percent of protein,fatty,lactose and ash among the dry matter were(2.18±0.18)%,(0.84±0.24)%,(6.56±0.20)%and(0.36±0.04)%,respectively.The average mass concentration of Ca,P,and Na in the mare milk were(84.7±16.6) mg/100 g,(52.1±6.3) mg/100 g and(15.9±5.0) mg/100 g,respectively.The percent of the linoleic acid and the linolenic acid were(11.44±1.32)%and(27.30±2.25)%of the total fatty acids.The mare milk's relative density,freezing point and acidity were(1.033±0.001) g/cm~3,(-0.544±0.016) °C and(5.35±0.79) °T,respectively.
