6种凤凰单丛茶香气成分的研究

摘  要:
[目的]分析6种凤凰单丛茶的香气成分组成。[方法]以凤凰高山茶蜜兰香、芝兰香、夜来香、黄枝香、玉兰香和杏仁香单丛茶成茶为试材,运用水蒸气蒸馏法提取,气相色谱质谱(GC-MS)法分析其香气组分。[结果]6种香型单丛茶的香气主要成分分别为蜜兰香单丛是芳樟醇、二氢芳樟醇、二十四烷、3,7-二甲基-1-溴-2,6-辛二烯、顺(反)-α,α-5-三甲基-5-乙烯基四氢化-2-呋喃甲醇;芝兰香单丛是吲哚、丁位壬内酯、芳樟醇、二十四烷、二十八烷;夜来香单丛是丁位壬内酯、2,6,10,15-四甲基十七烷、二十四烷、正十七烷基环己烷、植物醇;黄枝香单丛是对二甲苯、芳樟醇、二氢芳樟醇、3-十三烷基环己烷、正十七烷基环己烷、1-二十一烷基环戊烷;玉兰香单丛是芳樟醇、二氢芳樟醇、丁位壬内酯、咖啡因、邻二甲苯;杏仁香单丛是芳樟醇、香叶醇、吲哚、丁位壬内酯、咖啡因。[结论]从6种香型单丛茶的香气主要成分数据可知,各单丛香型均具有自身的独特性。

摘  要:
[Objective] To analyze the aroma components of six kinds of Feng Huang Dancong tea. [Method] With Dancong teas of Milan fragrance,Zhilan fragrance,Yelai fragrance,Huangzhi fragrance,Yulan fragrance and Xingren fragrance were used as the test materials. Steam distillation method was used for extraction. And aroma components were analyzed by GC-MS method. [Result] The major aroma components of six kinds of Feng Huang Dancong tea were as follows: Milan fragrance Dancong were linalool,dihydrolinalool,tetracosane,1-bromo-3,7-dimethyl-2,6-octadiene,cis and trans-a,a,5-trimethyl-5-ethenyltetrahydro-2-furanmethanol. And Zhilan fragrance Dancong were indole,γ-nonalactone,linalool,tetracosane and octacosane; Yelai fragrance Dancong was γ-nonalactone,2,6,10,15-tetramethylheptadecane,tetracosane,n-heptadecylcyclohexane and phytol; Huangzhi fragrance was p-xylene,linalool,dihydrolinalool,3-cyclohexyltridecane,n-heptadecylcyclohexane and henicosylcyclopentane; Yulan fragrance Dancong was linalool,dihydrolinalool,γ-nonalactone,caffeine,o-xylene; Xingren fragrance Dancong was linalool,geraniol,indole,γ-nonalactone and caffeine.[Conclusion] Aroma components of six kinds of Feng Huang Dancong tea show that each Dancong aroma has its own unique characters.
