农村地区小学生的正餐与零食食用行为及其影响因素——基于对湖南省某农村地区小学生的问卷调查

摘  要:
目的:调查湖南省某农村地区小学生的正餐与零食食用行为,探究其影响因素。方法:随机抽取湖南省某贫困县农村地区425名3~6年级学生,开展问卷调查并进行实证分析。结果:被调查小学生不吃早餐;牛奶鸡蛋摄入不足;喜欢腌制、油炸类食品;饮水习惯不科学等不良饮食习惯广泛存在。偏好"限制食用"类零食,倾向于购买低价劣质零食,购买时不查看包装信息,常因食用劣质零食而中毒。据Logistic回归,综合来看学生性别、年龄、是否住校、是否留守、家庭规模、家庭子女数、是否以零食代替正餐、是否边看电视边吃零食、吃零食频率、零食单价、食品安全与营养认知水平以及家长对学生关于食物安全营养的指导程度,显著影响被调查儿童的正餐与零食食用行为。结论:家长应加强指导儿童的饮食行为,学校应为学生开展营养教育,并将食品安全与营养学作为大专院校学生的通识课,培养储备人才。

摘  要:
[Objective]To investigate eating behavior of meals and snacks of primary school students in rural area of Hunan province and its influencing factors.[Method]Totally 425 pupils of Grade 3~6 in rural areas in Hunan province were randomly selected to answer some questionnaires,and empirical analysis were used.[Result]Habit of not breakfast eating was still common among some students,milk and eggs were inadequate intake,most students liked pickled food and fried food,other bad eating habits such as inadequate water drinking were also universal,many students prefered to eat "limit consumption" category snack,most pupils used to buy cheap and low-quality snacks,and neglect checking the packaging information,then the result showed that some students got food poisoning due to consumption of low-quality snacks such as ice creams.According to Logistic regression,students' gender,age,boarders or not,left-behind or not,family size,the number of children in their home,whether eating snack instead of dinner or not,whether eating snacks while watching TV,snacking frequency,snacks Price,cognitive levels on dietary nutrition and food safety,parents' guidance on food safety and nutrition,significantly affected investigated children's dietary behavior of meals and snacks.[Conclusion]Parents should strengthen the guidance of dietary behavior and food safety knowledge for children,schools should actively carry out nutrition education for students,food safety and nutrition should be general education courses for college students so as to cultivate more professional staff.
