热空气处理对鲜枣采后生理和贮藏品质的影响

摘  要:
以临泽小枣(Ziziphus jujube Mill.)为实验材料,采用45℃热空气处理2h,用0.01mm厚的聚乙烯袋折叠包装,于(0±0.5)℃下贮藏,每隔10d测定鲜枣呼吸强度、相对电导率,丙二醛(MDA)、维生素C、可滴定酸、可溶性固形物、可溶性糖、可溶性蛋白质、叶绿素、多酚和褐变速率等指标。结果表明:临泽小枣属于呼吸跃变型果实,与CK相比,45℃,2h热空气处理能有效地抑制鲜枣呼吸强度和果肉褐变速率(P<0.05);延缓果肉组织的相对电导率和MDA含量的升高;保持较高的维生素C、可滴定酸、叶绿素、多酚、可溶性糖和可溶性蛋白的含量,且差异显著(P<0.05),但对可溶性固形物含量变化影响不显著(P>0.05)。该处理可有效地延缓采后鲜枣果实衰老软化,保持鲜枣的贮藏品质。

摘  要:
‘Linze Xiaozao' jujube was used as raw material,which was pre-treated with hot-air at 45 ℃ for 2hours and then packed into folded polyethylene bags(0.01 mm thickness)and stored at(0±0.5)℃.The indictors of respiration intensity,relative conductivity,malondialdehyde(MDA),vitamin C,titrable acid,soluble solids soluble sugars,soluble protein,chlorophyll,polyphenol and browning rate and so on were decided in pulp of fresh jujube every ten days.The results showed that Linze Xiaozao is respiration climacteric fruit.compared with CK,the fruits treated at 45 ℃for 2hours with hot-air could effectively inhibited respiration intensity and browning rate(P<0.05),delay the increase of MDA content and relative conductivity in pulp,keep higher contents of vitamin C,titrable acid,chlorophyll,polyphenol,soluble sugars and soluble protein,Obviously,the all indictors of jujube hot-air treated before and after had a significant difference(P<0.05).However,the hot-air treatment showed no significant effect on soluble solids content(P>0.05).From the results it can be concluded that hot-air treatment at 45 ℃for 2hours can effectively delay fruit senescence,increase fruit quality for harvested jujube fruits.
