内蒙古5种野生葱属植物食用性和饲用性评价

摘  要:
对内蒙古5种野生葱属植物砂韭、野韭、沙葱、青甘韭和细叶韭的可食用部位叶片和花的营养物质进行了分析,以期为野生葱属植物的食用和饲用开发提供理论依据。结果表明:5种野生葱属植物叶片和花的维生素C含量分别为58.02×10~(-2)~72.77×10~(-2)、54.31×10~(-2)~61.86×10~(-2)mg/g;可溶性蛋白含量分别为2.79~4.32、3.62~4.73 mg/g;可溶性糖含量分别为1.06%~1.69%、3.25%~5.10%;酸性洗涤纤维含量分别为27.61%~37.04%、21.60%~29.21%;中性洗涤纤维含量分别为36.16%~48.75%、25.91%~33.93%;粗脂肪含量分别为3.75%~5.25%、4.01%~6.68%;粗蛋白含量分别为11.44%~17.31%、20.48%~26.95%;粗灰分含量分别为10.84%~16.83%、7.64%~9.48%。野韭、沙葱与韭菜食用性营养成分含量相近,可以优先作为蔬菜栽培食用;野韭、沙葱以及栽培种韭菜含有较低含量的中性洗涤纤维和酸性洗涤纤维,较高含量的粗蛋白和粗脂肪,是优质的牧草,可以作为饲料植物优先开发。根据隶属函数值法计算的平均隶属度可知:5种野生葱属植物花的营养价值均高于叶片;营养价值的顺序由高到低依次为野韭、沙葱、细叶韭、青甘韭和砂韭。

摘  要:
This study investigated the leaves and flowers nutrient content of 5 species of wild Allium plants in Inner Mongolia,Allium bidentatum Fisch.,Allium ramosum L.,Allium mongolicum Regel,Allium przewalskianum Regel,Allium tenuissimum L.,which will provide theoretical basis for eating and feeding of the wild Allium plants. The results showed that,for 5 species of wild Allium plants' leaves and flowers,the vitamin C contents were 58. 02 × 10~(-2)—72. 77 × 10~(-2),54. 31 × 10~(-2)—61. 86 × 10~(-2)mg / g; soluble protein contents were 2. 79—4. 32,3. 62—4. 73 mg / g; soluble sugar contents were 1. 06% —1. 69%,3. 25% —5. 10%;acid detergent fiber( ADF) contents were 27. 61% —37. 04%,21. 60% —29. 21%;neutral detergent fiber( NDF) contents were 36. 16% —48. 75%,25. 91% —33. 93%; ether extract(EE) contents were 3. 75% —5. 25%,4. 01% —6. 68%;crude protein(CP)contents were 11. 44% —17. 31%,20. 48% —26. 95%; crude ash contents were 10. 84% —16. 83%,7. 64% —9. 48%. Allium ramosum L.,Allium mongolicum Regel and Allium tuberosum Rottl have the similar nutrient content,which makes them available as edible vegetables. Additionally,all the three plants canbe used as excellent forage due to the low ADF and NDF content,and abundant ether extract and crude protein. According to the average membership degree of subordinate function,the nutritional values in flowers are higher than the ones in their leaves of 5 wild Allium plants. The nutritional value of 5 wild Allium plants from high to low in the order was: Allium ramosum L.,Allium mongolicum Regel,Allium tenuissimum L.,Allium przewalskianum Regel,Allium bidentatum Fisch..
