摘 要:
本试验旨在研究饲粮中添加半胱胺螯合锌(Zn-CS)对肥育猪体增重、肉品质以及肌肉和血清的氨基酸组成的影响。试验选取体重为(84.6±0.6) kg的杜×长×大三元杂交母猪40头,随机分为4组,每组10头猪,数据以个体为重复。对照组饲喂玉米-豆粕型基础饲粮,试验组饲喂在基础饲粮中分别添加90、180和300 mg/kg Zn-CS的试验饲粮。饲粮中添加合成氨基酸以满足75~100 kg和100~130 kg的肥育猪必需氨基酸的NRC(2012)营养需要,饲养试验38 d。结果表明:1)饲粮中添加Zn-CS对肥育猪平均日增重无显著影响(P>0.05)。2)饲粮中添加Zn-CS显著线性增加了屠宰后24 h背最长肌的亮度(L?)值(P<0.05),对背最长肌的其余肉色指标、pH、大理石花纹评分、系水力和剪切力无显著影响(P>0.05)。3)饲粮中添加Zn-CS显著线性增加了血清中游离谷氨酸、亮氨酸、组氨酸(线性、二次)、赖氨酸、蛋氨酸、半胱氨酸和总游离氨基酸的含量(P<0.05)。4)随着饲粮中Zn-CS添加量的增加,背最长肌中粗蛋白质含量显著线性降低(P<0.05),蛋氨酸含量显著线性增加(P<0.05),而甘氨酸(线性,P<0.05)、丙氨酸(线性,P<0.05)和脯氨酸(二次,P<0.05)含量显著降低。5)饲粮中Zn-CS的添加显著二次增加了背最长肌中游离赖氨酸、丙氨酸、苯丙氨酸、蛋氨酸、风味氨基酸和总游离氨基酸的含量(P<0.05),显著线性降低了游离甘氨酸的含量(P<0.05)。综上所述,肥育猪饲粮中添加Zn-CS对平均日增重和主要肉品质指标没有显著影响,但可以增加肌肉中的蛋氨酸含量,二次升高肌肉中游离氨基酸的含量,尤其是游离风味氨基酸的含量。90和180 mg/kg Zn-CS组中肌肉游离氨基酸含量最高。饲粮中添加300 mg/kg Zn-CS降低了肌肉中粗蛋白质含量。综合本试验的各项结果,建议肥育猪饲粮的Zn-CS添加量为90~180 mg/kg。

摘 要:
This experiment aimed to study the effects of dietary cysteamine chelated zinc(Zn-CS)on weight gain,meat quality,amino acid composition of meat and serum in finishing pigs. A total of 40 Duroc ×Landrace×Yorkshire crossbred gilts with body weight of(84. 6 ± 0. 6)kg were randomly assigned into four groups with 10 pigs per group and the data are replicated for each individual. Pigs in control group received a basal diet composed of corn-soybean meal,while experimental groups were fed experimental diets,in which90,180,and 300 mg/kg Zn-CS were added in the basal diet,respectively. Crystal amino acids were added in diets to meet the requirement NRC(2012)for all essential amino acids for 75 to 100 kg and 100 to 130 kg body weight of finishing pigs. The feeding trial lasted for 38 days. The results showed as follows:1)dietary supplementation of Zn-CS did not alter average daily gain in finishing pigs(P>0.05). 2)The inclusion of ZnCS linearly increased the lightness(L?)value of longissimus dorsi at 24 h after slaughtering(P < 0. 05).Meanwhile,there was no significant influence on pH,marbling score,water holding capacity,shear force and other meat color indexes(P>0.05). 3)Zn-CS supplementation linearly increased the contents of free glutamic acid,leucine,histidine(linear,quadratic),lysine,methionine,cysteine and total free amino acids in serum(P<0.05). 4)As the level of supplemental Zn-CS increased,the content of crude protein in longissimus dorsi linearly reduced(P<0.05),and the methionine content linearly increased(P<0.05),while glycine(linear,P<0.05),alanine(linear,P<0.05)and proline(quadratic,P<0.05)contents significantly decreased. 5)Dietary supplementation of Zn-CS quadratically increased the contents of free lysine,alanine,phenylalanine,methionine,flavor amino acids and total free amino acids(P<0.05),but linearly decreased the content of free glycine in longissimus dorsi(P<0.05). These results indicated that dietary supplementation of Zn-CS do not alter the average daily gain and major meat quality characteristics,but increase the content of methionine,quadratically increase the contents of free amino acids,especially flavored amino acids in muscle. The supplementation of 90 and 180 mg/kg Zn-CS has the highest content of total free amino acids in muscle among the treatments. Dietary supplementation of 300 mg/kg Zn-CS reduce the crude protein content of muscle. Collectively,the recommended dietary supplementation level of Zn-CS for finishing pigs is 90 to 180 mg/kg.[Chinese Journal of Animal Nutrition,2020,32(11):5117-5127]
