综述了和牛在日本的选育及特点,概述了和牛在我国的扩繁方式(即纯种繁育和杂交繁育).同时,对和牛肉质及风味物质进行分析,探讨了和牛牛肉的等级与风味物质的关系,并分析了国内和牛的肉质等级分布情况,对和牛产业发展具有一定的指导和借鉴意义.

摘  要:
This article described the breed and characteristics of Wagyu cattle in Japan. And the propagation methods(pure breeding and hybrid breeding)of Wagyu cattle were summarized in China. At the same time, this paper analyzed beef quality and flavor substances, discussed the relationship between beef grade and flavor substances of Wagyu cattle, and analyzed the distribution of beef quality grade of Wagyu cattle in domestic, to provide some guidance and reference for the development of Wagyu cattle industry.
