山羊乳过氧化物酶体系及其激活方案的研究

摘  要:
分析了8头西农萨能奶山羊乳中乳过氧化物酶活性和硫氰根含量,并测定了在25℃下不同激活剂浓度对羊乳24h滴定酸度的影响。结果表明,生鲜羊奶中乳过氧化物酶活性为(1.88±1.17)U/mL,硫氰根含量为(1.57±0.35)mg/L。在25℃贮藏温度下激活乳过氧化物酶体系可以对羊乳起到保鲜效果,硫氰根添加13.5 mg/L,过氧化氢添加1.1倍硫氰根摩尔浓度时,可以较低的保鲜剂添加量,获得较好的保鲜效果,平均酸度为25.6°T。

摘  要:
The activity of lactoperoxidase and the content of thiocyanate in Guanzhong Saanen goat milk have been detected.The titratable acidity of the goats' milk samples at the time of 24 hours were detected for evaluating the effects of different concentrations of the added reagents under the temperatures of 25℃.The results showed that the activity of lactoperoxidase in goat milk is(1.88±1.17)U/mL,and the content of thiocyanate is(1.57±0.35)mg/L.At the temperature of 25℃,when thiocyanate added at 13.5mg/L and hydrogen dioxide added at 1.1 times of thiocyanate molarity the milk samples have a longer shelf life.In this dose the average titration acid is 25.6°T.
