用高压脉冲电场对桃汁非热杀菌的研究

摘  要:
运用高压脉冲电场非热杀菌技术对桃汁进行非热杀菌,通过单因素试验和正交试验对染有大肠杆菌的桃汁进行了研究,运用高压脉冲电场对桃汁进行非热杀菌可以完全杀灭微生物;电场强度、脉冲数、杀菌温度与细菌残留数有关,电场强度是主要的影响因素,脉冲数对杀菌影响不显著。同时从感官评定、总酸、抗坏血酸及电导率等方面对桃汁品质进行分析,结果表明运用高压脉冲电场非热杀菌不影响桃汁的品质。

摘  要:
The inactivation of microbe is the most critical processing in fruit juice production. The peach juice was treated by high intensity pulsed electric field. The non-thermal inactivation of escherichia coli in the peach juice was studied by PEF through effect factors experiment and orthogonal test,the result showed that the escherichia coli was inactivated fully by PEF,inactivation of escherichia coli had relation with PEF strength, pulse number and inactivation temperature,and PEF strength and inactivation temperature were the main effect factors,effect of pulse number was less. Finally, the quality of peach juice treated by PEF has been analyzed. The result showed that the quality was not affected by non-thermal sterilization of high intensity pulsed electric field from the aspect of sensory quality assessment, total acid, VC, and electric conductivity.
