峨眉黑鸡屠宰性能及肉质性状研究

摘  要:
选取36周龄峨眉黑鸡公、母各6只,对其体尺、屠宰性能、肉品质及化学成分进行了测定分析。结果显示:峨眉黑鸡多项指标达到了优质肉鸡标准,同时,多项体尺、屠宰性能、肉品质和化学成分指标存在显著的性别间差异。研究表明,峨眉黑鸡的公鸡、母鸡均具有较好的产肉性能和优良的肌肉品质。

摘  要:
This study was conducted to compare the gender difference of the slaughter performance and meat traits of Emei black chicken at36 weeks old. The body size, slaughter performance, meat quality and chemical composition were determined and analyzed. The resultsshowed that a number of indicators achieved the high quality meat chicken standards for Emei black chicken. In addition, multiple indexes ofbody size, slaughter performance, meat quality and chemical composition were found significant differences in Emei black chicken betweenthe sexes. Our results suggested that both cock and the hen of Emei black chicken have good meat performance and excellent meat quality.
