养殖和野生黄条鰤肌肉营养成分的比较与评价

摘  要：
采用国际标准方法测定野生(体质量(2.86±0.21)kg)、工厂化((2.49±0.46)kg)和网箱((2.64±0.26)kg)养殖黄条鰤Seriola aureovittata肌肉的常规营养成分、氨基酸和脂肪酸含量,比较分析不同来源黄条鰤的营养品质。结果显示:黄条鰤蛋白质含量由高到低依次为:工厂化养殖(74.43%)、野生(72.64%)、网箱养殖(70.89%);氨基酸评分(AAS)和化学评分(CS)由高到低依次同为:工厂化养殖(1.33、1.00)、野生(1.19、0.89)、网箱养殖(1.18/0.88);多不饱和脂肪酸含量由高到低依次为:工厂化养殖(5.44%)、网箱养殖(5.25%)、野生(4.91%)。工厂化养殖黄条的肌肉品质要高于野生和网箱养殖黄条鰤。

摘  要：
The levels of approximate nutrients, amino acids and fatty acids were analyzed in muscles of wild, industrially and net cage cultured yellowtail Seriola aureovittata by an international standard method in order to compare e the nutritional quality of yellowtail derived from different sources. The results showed that there was the maximal content of protein in industrially cultured yellowtail(74.43%), followed by wild yellowtail(72.64%)and net cage culture yellowtail(70.89%). The industrially cultured yellowtail had the maximal amino acid score(AAS)of 1.33 and chemical score(CS)of 1.00, followed by wild yellowtail(1.19, 0.89)and net cage culture yellowtail(1.18, 0.88). The descending order of polyunsaturated fatty acid contents was expressed as the industrially cultured yellowtail(5.44%)> net cage yellowtail(5.25%)> wild yellowtail(4.91%). The findings indicate that the industrially cultured yellowtail has higher flesh quality than the wild and net cage culture yellowtail and can be used as a reference for the breeding techniques of yellowtail.
