不同年龄波杂山羊肌肉中脂肪酸的组成

摘要：

选用3月龄、6月龄、周岁以及成年4个年龄段的波杂山羊(波尔山羊×徐淮白山羊),采用气相色谱/质谱技术测定了不同年龄段波杂山羊肌肉脂肪酸的组成.结果表明:在所测得的24种脂肪酸中,C10∶0、C12∶0、14-甲基-C14∶0和14-甲基-C16∶0等4种脂肪酸随年龄变化表现出显著或极显著性差异(P<0.05,P<0.01),其中,支链脂肪酸随年龄增长明显增加,4个年龄组间表现极显著性差异(P<0.01);随着年龄的增长,饱和脂肪酸相对含量逐渐减少而不饱和脂肪酸呈递增趋势,但4个年龄组间均无显著差异(P>0.05);奇数碳脂肪酸在4个年龄组间含量相对稳定,无显著变化(P>0.05).

摘要：

Boer crossbred goats(a crossbreed between Boer goats and Xuhuai white goats) at the age of 3 and 6 months,1 year old and adult were used to investigate the fatty acids in muscle by GC/MS.The results demonstrated that 4 fatty acids hhad significant or very significant variations(P<0.05,P<0.01)in detected 24 fatty acids.Branched chain fatty acids were increased significantly with the age,there were very significant differences among the four age groups(P<0.01).The amounts of unsaturated fatty acids were increased and that of saturated fatty acids were decreased with the age,but there are no markedly difference among all groups(P>0.05).The amounts of the odd chain fatty acids were stable(P>0.05)in different age groups.
