倒毛鸡肌肉氨基酸组成分析及营养评价

摘  要:
【目的】评价贵州倒毛鸡肌肉的营养价值,为今后开展倒毛鸡品种选育及大规模开发利用提供参考依据。【方法】对倒毛鸡肌肉的水分、粗蛋白、粗脂肪、粗灰分及氨基酸含量与组成进行测定分析,并通过计算氨基酸比值系数分(SRC)评价其肌肉营养价值。【结果】180日龄倒毛鸡肌肉的粗蛋白含量在22.97%~23.86%,粗脂肪含量在1.29%~2.13%;倒毛公、母鸡的胸肌与腿肌均含有17种氨基酸,包括苏氨酸、缬氨酸、蛋氨酸、异亮氨酸、亮氨酸、苯丙氨酸、赖氨酸等7种人体必需氨基酸;氨基酸总量在18.63~20.70 g/100 g,富含必需氨基酸(7.77~8.43 g/100 g)和鲜味氨基酸(8.21~8.98 g/100 g)。参考WHO/FAO的氨基酸模式谱,倒毛鸡肌肉必需氨基酸组成均超出模式谱参考值,且SRC在81.00以上,4种肌肉的SRC排列顺序为:公鸡胸肌>母鸡胸肌>母鸡腿肌>公鸡腿肌。【结论】倒毛鸡肌肉必需氨基酸与鲜味氨基酸含量较高,各种必需氨基酸种类齐全,比例均衡合理,具有较高的营养价值及保健作用,是有利于人体氨基酸营养平衡的绿色食品。

摘  要:
【Objective】The nutritional value of frizzle chicken muscle was evaluated in order to provide reference for frizzle chicken varieties breeding and its large-scale development and utilization. 【Method】The contents and compositions of water, crude protein, crude fat, crude ash and amino acid in muscle of frizzle chicken were determined and analysed,and the protein nutritional value was estimated based on score of ratio coefficient of amino acids. 【Result 】The results showed that, the crude protein content in muscle of 180-day-old frizzle chicken was 22.97%-23.86%, and the crude fat content was 1.29%-2.13%. There were 17 kinds of amino acids to be found in the chest and leg muscles of frizzle chicken, including 7 kinds of essential amino acids viz., Thr, Val, Met, Ile, Leu, Phe and Lys. Furthermore, the total content of amino acids ranged from 18.63 to 20.70 g/100 g, and the muscles were rich in essential amino acids(7.77-8.43 g/100 g) and flavor amino acids(8.21-8.98 g/100 g). The contents of all essential amino acids in frizzle chickens were beyond reference values provided by WHO/FAO, and all scores of ratio coefficients(SRC) of amino acids were above 81.00.The SRC of 4 kinds of muscles was in order from largest to smallest as follow: cock chest muscle>hen chest muscle>hen leg muscle>cock leg muscle. 【Conclusion】The frizzle chicken muscles are rich in essential amino acids and flavor amino acids, containing all of essential amino acids with balanced and reasonable proportion. Therefore, the frizzle chicken has high nutritional value and healthcare function to human, is a green food in favor of keeping human body's amino acid nutrition balance.
