乳酸菌防霉去毒作用研究

摘  要:
探讨乳酸菌吸附黄曲霉毒素B1的强度及被吸附的黄曲霉毒素B1的致突变性。将乳酸菌细胞与黄曲霉毒素B1在生理盐水中相混合,在37℃振荡培养60和120min后检测生理盐水中黄曲霉毒素B1的含量,同时利用Ames试验检测被吸附的黄曲霉毒素B1的致突变性。结果表明,在使用的8株乳酸菌中,乳酸菌结合黄曲霉毒素B1的强度在4%~50%之间,其中干酪乳杆菌干酪亚种CGMCC1.539吸附黄曲霉毒素B1能力最强。Ames试验表明,被结合的黄曲霉毒素B1仍有较强的致突变性。乳酸菌对黄曲霉毒素B1有较强的吸附作用。

摘  要:
The toxin binding ability of eight strains of lactic acid bacteria for aflatoxin Bl wel-e studied.Lactic acid bacteria wel-emixed with aflatoxin B1 and incubated at 37℃ for 60 mins and for 120 mins.The toxin binding ability of the lactic acid bacteria ranged between 4%~50%.Among the lactic acid bacteria studied.L.casei subsp.cacei CGMCC 1.539 demonstrated a sigacantly high aflatoxin binding ability than other strains.However,chloroform extracts of binding aflatoxin B1exhibited mutagenic effect.Lactic acid bacteria had the effect on binding aflatoxin B1,and Ames test showed that binding aflatoxin B1 exhibited mutagenic effect.Lactic acid bacteria had the effect on binding aflatoxin B1.
