采前钙处理对树莓果实贮藏效果及清除自由基能力的影响

摘  要:
对树莓果实进行采前钙处理,研究其对采后贮藏期间果实的贮藏效果以及清除自由基能力的影响。于采前分别用50mmol/L氯化钙和丙酸钙喷施1,2,3次后,采摘果实并贮藏于1℃条件下,分别于第10,13d统计好果率,并测定清除自由基的能力以及总酚、总黄酮和花青素含量的变化规律。结果表明:氯化钙和丙酸钙喷施2次和3次处理均能显著提高树莓采后贮藏期间的好果率,其中喷施2次的效果最好。采前钙处理均显著提高树莓果实花青素、总酚、总黄酮和过氧化氢含量,显著降低果实总抗氧化能力、DPPH自由基和羟自由基清除能力。

摘  要:
The present study is mainly to investigate the effect of pre-harvest treatments of calcium on the production and scavenging of reactive oxygen species in raspberry fruit during postharvest periods.Raspberry were sprayed with 50 mmol/L calcium chloride and calcium propionate before harvest to detect sound fruit rate,bioactive components content,and free radical scavenging ability in raspberry fruit.The results showed that sound fruit rate increased significantly when calcium chloride or calcium propionate was sprayed twice or three times,and spraying twice was optimal.Calcium treatment improved the production of H2O2 as well as bioactive components such as anthocyanin,phenolics and flavonoid of raspberry fruit,while total antioxidant ability,DPPH radical and hydroxyl radical scavenging ability were significantly inhibited during postharvest storage.Preharvest spraying with calcium twice could significantly increase sound fruit rate in raspberry during postharvest storage,which lies in the induction of oxidative stress as well as secondary metabolites.
