摘  要:
为了应对快速、准确的食品微生物安全检测方法的需求,本文介绍了许多食品安全检测的新方法与新技术,包括快速生化检测方法、免疫学技术、代谢学技术、传感器技术、流式细胞术、PCR技术、基因探针技术、生物芯片,并概述这些检测技术对食品微生物安全的重要作用及影响。

摘  要:
In order to santisfy the needs of rapid and exact bacterial detection methods in foods, new methods and techniques, including rapid biology and chemical detection method, immunology technique, metabology technique, biosensor technique, flow cytometer (FCM) technique, PCR technique, gene probe technique and biochip technique are introduced, and effect significance of these techniques on food bacterial security are reviewed in this paper.
