饥饿应激对藏羊不同部位肌肉品质的影响

摘  要:
为了分析饥饿应激对藏羊肌肉品质的影响,研究采用酶联免疫分析法(ELISA)、蒽酮比色法、羟基联苯法,参照李梦云和孙玉民等的方法分别测定正常饲养和饥饿应激后藏羊背最长肌、颈部肌肉、股二头肌三个部位肌肉的AMPK活性、糖原含量、乳酸含量和品质指标。结果表明:藏羊不同部位肌肉有不同的AMPK活性、糖酵解指标和品质指标。饥饿应激对不同部位肌肉的糖酵解指标和品质指标有不同程度的影响,其中饥饿应激对股二头肌的糖酵解指标和品质指标影响最大。说明饥饿应激会给动物的肌肉品质带来很大的影响,进而给动物的生产带来危害,造成严重的经济损失。

摘  要:
To analyze the effect of starvation stress on the muscle quality of Tibetan sheep,the enzyme- linked immunoassay( ELISA),anthrone colorimetric method and the hydroxydiphenyl method were used in the research. And the AMPK activity,the glycogen contents,lactic acid contents,and quality indicators of the three parts of muscles including the longissimus dorsi muscle,neck muscle and the biceps femoris muscle in Tibetan sheep,were measured respectively,with reference to the methods of Li Meng- yun and Sun Yu- min after normal breeding and starvation stress. The result showed that there were different AMPK activity,glycolysis indicators and muscle quality indicators in different parts of the muscles in Tibetan sheep. Starvation stress had different degrees of effects on the glycolysis and muscle quality indicators in different parts of the muscles in Tibetan sheep,which had maximum effects on glycolysis and muscle quality indicators of the biceps femoris muscle. The results indicate that starvation stress can bring great effect on the muscle quality in animals,thereby bring harm to the production of animals,and causing serious economic losses.
