四种模式对偏高水分粳稻的储藏效果研究

摘  要:
含水率和温度是稻谷储藏的关键控制因子,低温储藏是稻谷的主要方式。讨论偏高水分粳稻在低温、紫外辐照-低温、气调-低温、紫外辐照-气调-低温四种方式下储藏对稻谷生理指标、营养成分、物理学特性及表观色泽的影响,比较四种处理和储藏相结合方式的效果差异。结果表明:在低温(15℃)条件下,气调处理能延缓稻谷崩解值的下降速度;紫外辐照能够改善稻谷胚的活性和减缓脂肪酸值的上升速度;气调和紫外辐照对稻米颜色的影响与稻谷含水率有极大关系,当含水率达到17.5%,两者的协同作用更具有实用价值。

摘  要:
Moisture content and temperature was the key control factor of rice storage,low temperature storage was the main way of rice.The effect on physiology index,nutrition,physical properties and apparent color of relatively high moisture content of rice at the low temperature,ultraviolet radiation-low temperature,modified atmosphere-low temperature,ultraviolet radiation-modified atmosphere-low temperature of four storage ways were discussed.The effect difference between four kinds of processing combined with storage were compared.The results showed:At low temperature(15℃)condition,the decline rate of breakdown value could be delayed with modified atmosphere;ultraviolet irradiation could improve germ activity of rice and slow down the change rate of the fatty acid value;The effect of modified atmosphere and ultraviolet irradiation on rice color had a great relationship with moisture content,only when the moisture content reached 17.5%,the synergistic effect of two treatments had practical value.
