马铃薯主食认知水平及消费行为研究

摘  要:
基于北京市实地调研问卷,考察了消费者对马铃薯主食化战略的了解程度、对马铃薯主食产品的认知水平及其购买行为,结果显示:消费者对马铃薯主食化战略的知晓率较高,但对马铃薯主食的营养及其健康功效认知参齐不齐,甚至存有误解。在购买行为上,七成以上的被调研者有购买过马铃薯主食,消费者比较强调马铃薯主食的营养、安全性和口感,对其价格也较为敏感。在获取信息渠道方面,对马铃薯主食的了解渠道不多,消费者主要依靠马铃薯主食推广活动宣传单获得相关信息,其次是电视和朋友介绍。因而,大力推动马铃薯主食产业化,须在扩大马铃薯主食生产规模,提高其市场覆盖率的同时,加强对消费者食物营养知识宣教,补齐消费者食物营养知识结构的短板,变随机被动消费为日常主动消费,从而推动马铃薯主食产业化稳步发展。

摘  要:
By analyzing consumer knowledge and buying behavior about potato staple food,this paper put up suggestions on developing potato staple food with Chinese characteristics including promoting diversification of potato-derived food products,improving its market coverage,meanwhile strengthening publicity and guiding consumption.
