摘 要:
[目的]优化温差-超声波复合法破壁山茶蜂花粉的工艺条件。[方法]以山茶蜂花粉为原料,采用温差并结合超声波辅助的复合破壁法对山茶蜂花粉进行破壁,使花粉破碎,释放出内容物。利用单因素试验和正交试验方法研究温差破壁和超声波破壁的最佳试验条件。[结果]试验获得温差破壁最佳试验条件如下:温差100℃,料液比1∶7 g/ml,冷冻时间24 h,水浴时间5 h,水浴温度45℃。在此条件下测得破壁率为68.75%,可溶性总糖的含量为40.02%,游离α-氨基氮的含量为3.58%。对温差处理过的样品进行超声波辅助破壁的最优工艺为:在超声10 min的情况下,测得破壁率为72.41%,可溶性总糖含量为46.08%,游离α-氨基氮含量为3.81%。[结论]该方法破壁效果比较好、成本低、可用于小规模生产。

摘 要:
[Objective]To optimize the technologcial conditions for wall-breaking of camellia bee pollen by temperature difference and ultrasonic. [Method]With camellia bee pollen as the experimental materials,the method of wall-breaking by temperature difference and ultrasonic was used in pollen,and the single factor and orthogonal experiment methods were used to study the best experimental conditions for temperature difference wall-breaking and ultrasonic wall-breaking. [Result]The best experimental conditions for temperature difference wall-breaking were as follows: temperature difference 100 ℃,ratio of material to liquid 1∶ 7 g/ml,refrigerant time 24 h,time of water-bath 5 h,temperature of waterbath 45 ℃. Under these conditions,the wall-breaking rate was 68. 75%,the total sugar content was 40. 02% and the free alpha-amino nitrogen was 3. 58%. And then carried out wall-breaking by ultrasonic. After 10 minutes of ultrasonic processing,the wall-breaking rate reached to 72. 41%,the total sugar content was 46. 08% and the free alpha-amino nitrogen was 3. 81%. [Conclusion]This method has good wall-breaking effect,with low cost,and can be used for small-scale production.
