碱液喷涂对原糖储存过程中品质劣变的影响

摘  要:
随着国内精炼糖厂的布局不断扩大,进口原糖在精炼糖厂进行二次精炼提纯工艺在国内逐渐形成规模。由于原糖在储存过程中色值和还原糖含量还会继续增加,储存环境及物料性质对原糖储存过程中的原糖色值、还原糖含量和pH具有较大的影响,从而对后续原糖加工的提糖效率会造成较大影响。通过调整原糖初始pH值可能会降低蔗糖的转化及色值的增加速率,抑制原糖品质劣变。本研究对氢氧化钙碱液均匀喷涂原糖表面的技术处理后获取的原糖(DRS),通过考察温度、湿度、水分含量条件参数,研究原糖(RS)及喷涂后原糖(DRS)在不同储存条件下品质的变化趋势。将实验结果应用于中试生产指导,原糖样(Z-RS)储存20周后色值增加了99.14%,经滚筒干燥阶段喷涂氢氧化钙水溶液后的原糖(Z-DRS)色值增加了85.24%,处理后色值减少13.90%;碱处理原糖的还原糖下降0.67个百分点。本研究为工厂控制原糖品质劣变,降低精炼成本、提高生产效益提供了理论支撑。

摘  要:
With the expanding proportion of sugar refining manufactures in China, secondary refining and purification process of imported raw sugar in refineries has gradually increase in China market. Because the color value and reducing sugar content of raw sugar will continue to increase during storage, the storage environment has a great influence on the color value, reducing sugar content and pH of raw sugar during storage, which is directly related to the extraction efficiency of subsequent raw sugar processing. By adjusting the initial pH value of raw sugar, the rate of sucrose conversion and color value increase may be reduced, and the quality deterioration of raw sugar can be slowed down. In this study, both treatments of untreated raw sugar(RS) and raw sugar(DRS) by homogeneous alkali spraying on the surface were compared. The changing trend on the quality of RS and sprayed DRS under different storage conditions was investigated at various parameters of temperature, humidity and moisture content. In the pilot-scale experiments, the color value of raw sugar(Z-RS) increased by 99.14% after 20 weeks storage, while the color value of raw sugar(Z-DRS) by spraying calcium hydroxide aqueous solution increased by85.24%. The results showed that the color value and reducing sugar content of Z-DRS decreased by 13.90% and0.67 percent point, respectively, which may provide theoretical support for controlling the quality deterioration of raw sugar, reducing refining cost and improving production efficiency for the sugar refining industries.
