摘 要:
通过比较采摘期(6-10月)鄂尔多斯地区俄罗斯大果沙棘和中国沙棘雌雄株鲜叶主要生化成分含量表明,7月俄罗斯大果沙棘雄株鲜叶总黄酮含量为1.72%、粗多糖含量为3.62%、咖啡碱含量为0.68%、总多酚含量15.7%,为最佳沙棘叶茶原料.以7月中旬俄罗斯大果沙棘雄株鲜叶为原料,进一步比较了热风杀青、微波杀青和烘青3种杀青工艺对沙棘叶茶品质的影响,并优化最佳工艺.主要生化成分分析与感官审评表明,热风杀青为沙棘叶茶最佳杀青工艺,工艺参数为:杀青时长120 s、杀青温度180℃、投叶量1.5 kg.

摘 要:
During the leaf picking period from June to October,the contents of main biochemical components of the male and female leaves of Russian and Chinese seabuckthorn tea trees in the Ordos region were compared. The results indicated that in July,seabuckthorn leaves from Russian giant fruit male plants were the best raw materials,containing a total of 1. 72% flavonoids,3. 62%crude polysaccharides,0.68% caffeine,and 15.7% polyphenols. The effects of three different fixing technologies,namely,hot air fixing,microwave fixing,and bake fixing technology,on the quality of seabuckthorn leaf tea were compared using the fresh leaves of Russian big fruit seabuckthorn picked in mid-July to find the best optimized fixing technology. The main biochemical components analysis and sensory evaluation of the measurement showed that the hot air fixing process was the best fixing technology for processing seabuckthorn leaf tea with technological parameters of 120 sec length,180 ℃,and 1.5 kg leaf weight.
