橡实淀粉的湿热处理研究

摘  要:
通过对湿热处理淀粉粘度的测定,揭示了湿热处理对橡实淀粉改性的影响规律,结果表明:湿热处理的时间、温度和含水率等因素对橡实淀粉的改性的程度达到极显著水平,各因素影响程度的大小依次为:时间、温度、含水率,湿热处理淀粉的改性程度大小随处理时间、温度和含水率增加而加强。

摘  要:
This experiment makes sure the influence of moistheat treatment on starch modification by measuring the viscosity properties after moist-heat treatment.The results show: time,temperature,water content or moisture and so on have very significant influences on the starch modification of acorn.Their influencing intensity are: time>temperature > water content or moisture.In addition the magnitude of the starch modification caused by moist-heat treatment intensifies with the increase of time,temperature,and water content or moisture.
