实施“农村义务教育学生营养改善计划”的学校食堂食物供应状况分析

摘  要:
目的:了解我国实施"农村义务教育学生营养改善计划"(以下简称"营养改善计划")的学校食堂的食物供应状况,为更好地实施"营养改善计划"提供科学依据。方法:在699个实施"营养改善计划"的每个县内随机抽取20%~30%的小学和初中,通过记账法对2013年学校食堂的食物供应情况进行调查。结果:调查的9 346所供餐学校中,各类食物供应量偏低的比例均已超过50%,其中鸡蛋、豆制品、牛奶等供应不足的学校比例分别达到81.5%、96.5%和79.9%。小学和初中、不同季节、不同供餐模式间均存在统计学差异(P值均<0.05)。食堂食物供应情况呈现小学优于初中、春秋季优于夏冬季、食堂供餐优于企业供餐等特点。结论:我国实施"营养改善计划"的学校食堂食物供应普遍不足,应加强食堂配餐指导,增加蛋类、豆制品和奶类食物的供应。

摘  要:
【Objective】To evaluate the food supply in schools covered by the Nutrition Improvement Program for Rural Compulsory Education Students( NIPRCES),and to provide the scientific evidence to improve the nutrition improvement program.【Method】Totally20% ~ 30% primary schools and middle schools were randomly selected from 699 NIPRCES trial counties. The school meal foods were assessed by Weighed Food Records in 2013.【Result】A total of 9 346 NIPRCES trial schools were surveyed and over 50% with relatively poor supply in all foods when compared with the recommended values. The rates of short supply of eggs,soy products,and milk were 81. 5%,96. 5% and 79. 9% respectively. Statistic differences were significant among primary and middle schools,seasons,and catering modes( P <0. 05). The food supply was found better in middle schools,spring and autumn,and school cafeteria serving meals.【Conclusion】In general,the food supply in NIPRCES trial schools was poor. Dietary instruction and training should be strengthened. More eggs,soy products and milk should be supplied in school meals.
