摘  要:
为全面了解犏牛肉的营养价值,采用UPLC-MS/MS脂质组学技术对犏牛背最长肌的脂质组进行定性、定量分析。结果显示,从8个犏牛背最长肌样品中共检测到296种脂质分子类型,其中甘油三酯、磷脂酰胆碱、磷脂酰乙醇胺和鞘磷脂的种类及相对含量占比较高,分别为97种(44.91%)、52种(44.40%)、42种(44.91%)、20(7.30%),除以上4类脂质以外,其余11类脂质分子的相对含量均低于1%,对犏牛背最长肌的脂质组分析表明,犏牛背最长肌中的脂质种类不仅丰富,而且磷脂类的相对含量较高,营养价值较高,本实验结果可为进一步的开发和利用犏牛提供理论依据。

摘  要:
In order to fully understand the nutritional value of yak meat, the lipid group of longissimus dorsi muscle of yak was qualitatively and quantitatively analyzed by UPLC-MS/MS lipidomics. The experimental results showed that 296 lipid molecular types were detected from 8 longissimus dorsi muscle samples, among which 97(44.91%), 52(44.40%), 42(44.91%) and 20(20%) were triglyceride, phosphatidylcholine, phosphatidylethanolamine and sphingomyelin,respectively. The lipid group analysis of the longissimus dorsi muscle showed that the longissimus dorsi muscle was not only rich in lipid species, but also had high relative content of phospholipids and high nutritional value. The experimental results provided theoretical basis for further development and utilization of the longissimus dorsi muscle.
