朱红秘孔菌(Pycnoporus cinnabarinus)代谢阿魏酸产生香兰素的研究

摘  要:
香兰素是食品工业中应用最广泛的香料之一。试验对发酵产生香兰素的朱红秘孔菌Pycnoporuscinnabarinus的种子培养基和发酵培养基进行优化,选出可以促进菌体细胞快速生长的果糖、酵母粉作为种子培养基的碳源、氮源,经过3 d的培养,使朱红秘孔菌的生物量提高到0.726 g.L-1。优化发酵培养基,选择出最有利于香兰素生成的碳源、氮源及无机盐,优化后香兰素在发酵液中的浓度达到0.403 g.L-1,摩尔转化率为28.8%。

摘  要:
Vanillin is one of the most important flavor material and widely used in food industry.The optimum seed culture and fermentation culture for metabolizing ferulic acid to produce vanillin by Pycnoporus cinnabarinus were studied in this paper.The results showed cells of Pycnoporus cinnabarinus could grow fleetly in seed culture under using fructose as carbon source and yeast extract as nitrogen source.After 3 days culture,the biomass of Pycnoporus cinnabarinus could achieve 0.726 g·L-1.Results for the test of the optimum fermentation culture showed that the content of vanillin in fermentation culture could achieve 0.403 g·L-1 under using the optimum carbon source,nitrogen source and mineral salt.And the molar conversion rate of vanillin was 28.8%.
