Among environmental factors affecting wheat quality, soil characteristics and nutrients are very (important). In order to offer theoriotic reference for the production of high-quality wheat, the effects of soil (characteristics) and nutrients on wheat quality in this paper were discussed. Soil (characteristics) (affect) directly wheat quality. High-gluten wheat is often cultivated on dry and high fertility soil, and other soil (characteristics) such as soil type and texture, soil (character) and structure also can (affect) wheat quality. Nutrients supplying (affect) wheat yield and quality by directly (affecting) metabolism. Nitrogen is one of the most active factors (affecting) wheat quality, and the amount, time, manners and sorts of applying N fertilizer all can make obvious effects. Effects of phosphorus and kalium on wheat quality are often not obvious, but only applying N, P and K in (proper) proportion, wheat quality could be effectively improved. Applying micronutrients fertilizer has no (positive) effect on common soil, but on the soils absenting or not having sufficient micronutrient, micronutrient (fertilizer) should be applied to assure high wheat quality.
