云南省高校大学生奶制品消费行为分析

摘  要:
目的:了解云南高校大学生奶及奶制品摄入状况、营养知识及其影响消费行为的因素。方法:2017年5—6月,采用分群随机抽样调查方法,以问卷的形式对云南省6所高校663名大学生进行奶制品消费情况调查。结果:云南高校大学生奶制品人均摄入量为87.59g/d,不同生源地大学生奶制品摄入量,城市显著高于农村(P<0.05)。关于奶制品相关知识正确率,高温灭菌奶保质期的调查,男性显著高于女性(P<0.05);奶制品与乳饮料营养价值高低的调查,女性显著高于男性(P<0.05);奶制品是否含有丰富蛋白质的调查,女性显著高于男性(P<0.05)。在消费频率和消费支出方面,性别之间不存在显著影响。大学生不同奶制品购买因素二项分类Logistic回归分析表明,影响大学生购买奶制品主要因素是品牌(P<0.01)和价格(P<0.05);关于新口味奶制品开发,水果味是大学生最愿意尝试的口味。结论:大学生奶制品摄入量总体较低,且奶制品相关知识有待提高,应引导树立正确的消费观,摄入更多的奶制品。

摘  要:
Objective To understand the intake of dairy products,nutritional knowledge and the factors that affect consumer behavior among college students in Yunnan province. Method From May to Jun in 2017,a method of cluster sample was performed to select 663 college students in six universities in Yunnan province by questionnaire which investigated the consumption of dairy products. Result The per capita intake of dairy products in college students was 87. 59 g/d. The intake of dairy products of college students in different source areas was significantly higher in cities than in rural areas( P < 0. 05). The survey about the correct rate of dairy products knowledge and the shelf life of high-temperature sterilized milk were significantly higher in males than in females( P < 0. 05). In the survey,the nutritional value of dairy products and milk drinks were significantly higher in females than in males( P < 0. 05). Whether the product contained rich protein,women were significantly higher than men( P < 0. 05). There were no significant effects on gender between consumption frequency and consumer spending. Logistic regression analysis showed that the main factors influencing college students to buy dariy products were brands( P < 0. 01) and prices( P < 0. 05). Fruit flavored dairy products were the new flavors which most college students want to try.Conclusion Dairy products intake of college students is generally deficient,and it is necessary to improve the related knowledge of dairy products,which leads to establish right consumption concept and consume more dairy products.
