茶树花热风干燥工艺研究

摘  要:
采用GZ-1型干燥试验装置,在不同温度和风速条件下进行茶树花热风干燥动力学试验,获得茶树花干燥水分曲线、干燥速率曲线,分析风温、风速对干燥质量、干燥速度的影响;并通过不同干燥条件下茶树花的感观指标、多酚含量对比分析,确定茶树花较佳干燥工艺。结果表明:较佳干燥工艺为温度60~70℃、风速2.5 m.s-1,干燥至干基含水量小于1.15 kg.kg-1后,风速调至0.8 m.s-1,时间70 min,干花含水率≤12%。该研究为规模化茶树花干制技术提供了科学依据。

摘  要:
Tea flower [Camellia sinensis(L.) O.Kuntze] is one of the abundant resources.But it is rarely utilized for further applications.The hot air drying kinetics experiment on tea plant flower was studied under different air temperatures and wind speed in GZ-1 dryer.The moisture content and drying rate curves were obtained and the influence of air temperature and wind speed on the quality of drying and drying speed were analyzed.The feasible drying condition(temperature-60-70 ℃-,air rate 2.5 m·s-1,dry until water content under 1.15 kg·kg-1,then use air rate 0.8 m·s-1 for 70 min until the water content under 12%) was found through comparison on sensory index of the flower and polyphenol content under different drying conditions.The result of this study may provide a basis for the large-scale drying technique on the tea plant flower.
