主要研究果蓉广式月饼的原料、配方及生产工艺。重点对影响月饼皮料成型的因素进行了较为详细的分析和讨论,并找出月饼皮料最佳配方,为月饼生产提供一些理论依据及实际操作经验。

摘  要:
The raw material, prescription, and the processing technology of Fruit - Filled Moon Cake with style of GuangDong were studied. The factors affecting the forming of the outer casing were analysed and discussed in detail. The optimal technology of producing the Moon Cake have been developed.
