摘 要:
采用正交实验,以血红素/多肽氮比为指标,确定了富血红素多肽生产的最优酶解条件,并使用模拟人体消化体系分析该富血红素多肽的生物可利用性。结果表明,在Protamex/Alcalase=1∶1,E/S=2%.S%=10%,pH=8.0,45℃,12h条件下,酶解效果最好;富血红素多肽在模拟人体消化体系中的生物利用率可达91%,较对比样显著提高;GPC图表明,经人体模拟消化后富血红素多肽分子量分布较对比样更集中于小分子量范围。

摘 要:
The enzymatic hydrolysis of haemoglobin into heme-enriched peptide with the high ratio of heme/peptide nitrogen were optimized by orthogonal test L9(34). The biological availability of heme-enriched peptide in simulated gastrointestinal condition was analyzed. Results show that:the optimization of the hydrolysis condition was obtained as follows:Protamex and Alcalase with a ratio 1∶1, E/S=2%, S%=10%, pH=8.0, 45℃, 12h. The biological availability of heme-enriched peptide in simulated gastrointestinal condition was 91%,which is much higher than the control sample. The molecular weight distribution of heme-enriched peptide after digestion by simulated gastrointestinal condition was lower than that of the control by the determination of GPC.
