富血红素多肽生产初探

摘  要:
以血红素/多肽氮比及酸溶性血红素多肽百分比为指标,研究酶法水解血红蛋白生产富血红素多肽。结果表明,热处理及超高压处理与酶解效果呈负相关的关系,而不经前处理的血红蛋白的最佳酶解条件为:Protamex/Alcalase=1∶1,E/S=2%,S%=10%,pH=8.0,45℃,12h。

摘  要:
The hydrolysis enzymatically of haemoglobin into heme-enriched peptide with the high ratio of heme/peptide nitrogen and the content of acid-soluble heme peptide has been studied.The results show that thermal or high pressure treatments show negative effect on the hydrolysis.And haemoglobin without any pretreatment could be well hydrolyzed into heme-enriched peptide by protamex and alcalase with a ratio 1∶1,E/S=2%,S%=10%,pH=8.0,45℃,12h.
