烟草薄片中蛋白质的酶解研究

摘  要:
研究了温度、酶添加量和酶解时间等酶解条件对烟草薄片原料中蛋白质酶法降解的影响。结果表明,在pH值5.2的烟草水溶液中,蛋白质的最佳酶解温度为50~60℃;随着酶添加量与酶解时间的增加,烟草蛋白质含量逐渐降低,同时酶解液中可溶性氮以及游离氨基酸含量逐步增加。

摘  要:
The influence of enzymatic hydrolysis conditions(temperature,pH,enzyme addition and substrate concentrations) was studied.The results showed that the optimal enzymatic hydrolysis temperature was 50-60 ℃ at pH value of 5.0-6.0 buffer system of tobacco aqueous solution.The protein content in tobacco was gradually decreased with the increase of enzymatic hydrolysis time and enzyme concentration,while the concentration of soluble nitrogen and total free amino acids in enzymatic hydrolysate gradually increased.
