白酒红外光谱“指纹特征”分析

摘  要:
首次采用傅里叶变换红外光谱技术研究了五粮液、极品五粮液、贵州茅台和泸州老窖四种白酒冷冻干燥物的红外指纹特征。一维谱图分析表明,五粮液在1727 cm-1附近有明显的酯羰基峰,含有较多的乳酸和酯类物质;泸州老窖在1599 cm-1附近有较强的(-氨基酸的-COO-不对称伸缩振动和-NH3+不对称弯曲振动峰,含有较多的氨基酸。五粮液在1601 cm-1附近的吸收峰明显强于贵州茅台的1592 cm-1附近的峰。在二维相关红外谱中,极品五粮液和五粮液在1470 cm-1附近都有1个较强的自相关峰,五粮液还有一个次强的自相关峰,说明五粮液干燥物中还含有一些热稳定性较差的物质。该方法可以快速、方便的区分不同种类、不同等级白酒干燥混合物组群结构的差异特征,对客观地评价白酒的品质提供了可靠的理论依据。

摘  要:
The Fingerprint Features of four kinds of frozen-desiccated Alcohol was studied by Fourier Transform Infrared Spectroscopy(FT-IR).Wuliangye Alcohol contain lactic acid and ester,with apparent carbonyl peak at 1727 cm-1;Luzhoulaojiao Alcohol contain some kinds of amino acid,with stretching vibration of-COO-group in α-amino acid and bending vibration of-NH3+ at 1599 cm-1.In two-dimensional infrared correlation spectroscopy(2D-IR),there is an obvious autopeak around 1470 cm-1 for both Highest-grade——Wuliangye Alcohol and Wuliangye Alcohol.In addition,the Wuliangye Alcohol shows an autopeak with lower intensity.This analytical method is fast and direct for evaluating the quality of Alcohol.
