洪山鸡肉质特性研究

摘  要:
以随州湖北同星农业有限公司的放养洪山鸡、笼养洪山鸡与岭南黄鸡为试验动物,比较研究了其肌肉水分、脂肪、氨基酸含量等肉质性状。结果表明,放养洪山鸡公鸡肉样的水分含量(65.37%)显著低于岭南黄鸡(73.77%,P<0.05);放养洪山鸡公、母鸡肌肉脂肪(12.53%和10.80%)均显著低于岭南黄鸡(17.13%和20.27%,P<0.05);放养洪山鸡公鸡肉样的氨基酸总和、缬氨酸、赖氨酸、组氨酸、天冬氨酸、谷氨酸的含量显著高于岭南黄鸡(P<0.05);放养洪山鸡公母鸡肌肉苏氨酸含量均显著高于岭南黄鸡(P<0.05)。放养洪山鸡肌肉中必需氨基酸与鲜味氨基酸含量最高、笼养洪山鸡次之、岭南黄鸡最低。

摘  要:
In this article, Hongshan chicken raised in cage or on hill, Linnan yellow chicken from Hubei Tongxin Agriculture Limited Company of Suizhou were selected to identify muscle charateristics,including water,fat and amino acid (AA).The result showed: The water and fat in muscle of Hongshan chicken raised on hill was lower than that of Linnan yellow chicken significantly.The total AA and some single AA,Thr,Val,and so on in muscle of Hongshan chicken raised on hill was higher than that of Linnan yellow chicken significantly. Essential AA and tasty AA in muscle of Hongshan chicken raised on hill was highest,that of Hongshan chicken raised in cage was higher,and that of Linnan yellow chicken was lowest.
