不同品种鸡胸肌脂肪酸组成分析

摘  要:
分析了2个湖北地方鸡品种洪山鸡、江汉鸡与科宝500白羽肉鸡胸肌脂肪酸含量。结果表明,鸡肉中脂肪酸组成以油酸、棕榈酸、亚油酸、硬脂酸、花生四烯酸、十五碳一烯酸为主,占脂肪酸总量的82%以上,且以不饱和脂肪酸(USFA)占主体,达63%以上。地方鸡多不饱和脂肪酸(PUFA)和必需脂肪酸(EFA)含量显著高于科宝500白羽肉鸡,表明地方鸡具有更为优良的肉质风味。

摘  要:
The fatty acid contents in chest muscle tissues of three chicken(Hongshan chicken,Jianghan chicken and Cobb 500 white feather broiler) were determined. The results showed that the fatty acid in the chickens muscle were mainly consisted of oleic acid,palmitic acid,linoleic acid,stearic acid,arachidonic acid and pentadecadienoic acid, accounted more than 82% of total fatty acid. The unsaturated fatty acids(USFA) in the three chickens were more than 63% of the total fatty acid. The percentage of polyunsaturated fatty acids(PUFA) and essential fatty acids(EFA) in Hongshan chicken and Jianghan chicken were significantly higher than those in Cobb 500 white feather broiler. It is indicated that the native chicken had good meat quality and flavor.
