摘 要:
为了解传统家酿葡萄酒的产品质量,收集并测定22份家酿葡萄酒的理化指标和卫生指标。结果表明,仅11份样品的酒精度达标,达标率为50%;18份样品残余总糖含量小于4.0 g/L,属于干型葡萄酒;15份样品总酸含量超标(>5.0 g/L);4份样品的挥发酸含量超标(>1.05 g/L);8份样品甲醇含量超标(>0.04 g/100 mL);菌落总数和大肠菌群数各有5份样品超标。综合分析22份样品的检测指标,有4份样品完全符合国家标准,样品不合格率高达81.81%。因此,传统家酿葡萄酒的制作和饮用应慎重。

摘 要:
To analyze the quality of homebrew wine,the physical and chemical indicators and hygienic indicators of 22 samples of homebrew wine are studied.The results showed that only 11 samples of homebrew wines'content of alcohol reached the national standard,the rate was 50%;the content of total sugar of 18samples was less than or equal to 4.0 g/L,belonging to dry wine;the content of titratable acid of 15 samples was more than 5.0 g/L;the volatile acid content of 4 samples was more with national standards(>1.05 g/L);the methanol content of 8 samples exceeded the national standard(>0.04 g/100 mL);the coliform colonies of 5samples were out of limits.Comprehensive analysis of the 22 samples show that the quality of 4 samples reaches the national standards,the non-qualified ratio of homebrew wine is as high as 81.81%.Therefore,drinking and brewing of homebrew wine should be careful.
