响应面法在超高压钝化哈密瓜汁中两种酶研究上的应用

摘  要:
为了探讨响应面法在超高压钝化哈密瓜汁中过氧化物酶(POD)和多酚氧化酶(PPO)研究上的应用,采用统计软件Design-Expert 7.1中的Box-Behnken响应面设计,以温度、pH值、压力、保压时间等为自变量,以POD和PPO的残存酶活为响应值,对哈密瓜汁的超高压处理工艺进行了研究;建立了超高压钝化2种酶的回归模型,并对其进行了实验验证。结果显示:在实验范围内,回归模型拟合情况良好,达到设计要求。

摘  要:
In order to investigate the application of the response surface method on the ultra high pressure(UHP) inactivation of peroxidase(POD) and polyphenoloxidase(PPO) in Hami melon juice,all experiments were designed and optimized with Box-Behnken concept of response surface methodology(RSM):Set the temperature,pH value,pressure and holding time as independent variables,the residual activities of POD and PPO as response values.The regression equation(model) for UHP inactivation of POD and PPO was established,and also verified with the verification experiments.
